What is a truffle ?


Lovers of good food consider truffles to be the black gold of cooking. However, many people do not know what truffles are, whereas others have heard of them and some even revere them.

 

Many different elements have gone into giving truffles their mysterious, dark and seductive appearance... The secrecy of the places where they are born, how they're found (using trained dogs or pigs and by some experts watching the behaviour of the truffle fly Suillia gigantea meig and Suillia fuscicornis), how they're sold, etc.

 

Broadly speaking, truffles live in symbiosis with the trophic roots of some plants. They are normally harvested from the second week in November up to the middle of March, although the season can vary slightly depending on the year.
